GREEN LENTIL SOUP: 2 Medium onions diced, 4 tbsp Cypressa Olive Oil, 2 garlic cloves crushed, 1/2 tsp Ground Cumin; 1/2 tsp Ground Coriander, 150g Green Lentils washed, 1 1/2 Litre water, 1/2 Lemon juiced. Fry the diced onions in the Cypressa Olive Oil until golden. Stir in the garlic, cumin and coriander and lightly fry for a few seconds. Add the washed Green Lentils and the water and bring to the boil. Simmer for 35 to 45 minutes or until the lentils are tender. Add the lemon juice before serving. Add extra water if required. Any flavoured stock can be used instead of water.
