Lottie Shaw's Seriously Good Yorkshire Parkin is individually hand crafted and baked in our Yorkshire craft bakery. Lottie Shaw's Seriously Good Yorkshire Parkin is a cake baked using the perfect blend of oatmeal, syrup, blend of oatmeal, syrup, black treacle and ginger. One of the 'Seriously Good' things about Yorkshire Parkin is the treacle caramalises and hardens during baking, so before it leaves the bakery it is held to allow it to 'come again'. This is where the caramel softens giving each piece the perfect crumbly stickiness. There are no artificial life enhancing ingredients in our Yorkshire Parkin yet the syrup preserves the cake for up to 12 weeks. Lottie Shaw's family have been baking in Yorkshire for over 100 years and this Yorkshire Parkin recipe has been passed down through the generations. Lottie felt that it was so good that everyone should have the opportunity to enjoy it.
