Aldo Pasta is named after the first two letters of the surname of each Luigi Donnari and his wife Maria Alzapiedi, who make only 50 kg of dry pasta a day from their small workshop in Monte San Giusto, the Marche region of Italy. Using a variety of local grains for each product, the dough is kneaded by hand pulled onto a small machine, cut by hand and then hung to slowly dry low temperatures for a natural drying process. The final step is packaged in beautiful craft boxes. The resulting paste has a rough texture and a bright egg colour, which is light and fragrant. Widely considered by Italians as one of Italy's best artisan pastries, it is also approved by Heston Blumenthal, who described in his book 'in search of perfection' as "perhaps the most beautiful pasta in Italy".
