• The extra virgin olive oil Terre Rosse is a monocultivar of Moraiolo produced in Umbria by the Hispellum farm. The quality is recognized by the DOP Umbria Colli Assisi Spoleto and Kosher/P certifications. Olive Harvest 2024. Format 250 ml.
• The cultivation is biodynamic, without the use of herbicides and pesticides. This organic oil is subjected to constant and rigorous checks and authenticity and traceability are guaranteed.
• The olives are harvested exclusively by hand and placed in aired containers. They are cold pressed within 6 hours from the collection and the oil is stored in stainless steel tanks.
• The color is green with golden yellow tones. The scent is fruity, intense with strong hints of herbs. The flavor is full-bodied with a fruity green taste, spicy and pungent in the throat.
• Excellent on bruschetta, it is ideal for both savory and well-structured dishes (grilled meats, roasts, legume soups, pasta with beans), and sweet dishes (potatoes or soups of leek or onion).

Territory
The extra virgin olive oil Terre Rosse is a Monocultivar of Moraiolo produced in Spello, Umbria, by the Hispellum Farm.
The olives are grown on terraced olive groves, on grounds rich of stone and red ground, ideal for the development of an oil rich of natural anti-oxidants.

Biodynamic
The cultivation is biodynamic, without the use of herbicides and pesticides, and the controls on the production chain are constant and rigorous.
Since 2010 it has the Biodynamic Certification, a milestone also achieved thanks to the partnership with the University of Studies of Perugia.
The quality of this production is recognized every year by the DOP Umbria Colli Assisi Spoleto Certification, the Certification of Organic Agriculture and the Kosher/P Certification.
The olives are harvested exclusively by hand and placed in aired containers, away from heat sources.
The olives are cold pressed within 6 hours from the harvest. The oil is then stored in stainless steel tanks in a modified environment (Nitrogen) and bottled only at the time of use.

Colour
Green with golden yellow tones, a sign of absence of oxidation.

Scent
Intense fruity with strong hints of herbs, reminiscent of artichoke and also a bitter almond, but above all the scent of freshly pressed olives in the family oil mill.

Flavour
Full-bodied with fruity, spicy and pungent taste in the throat, since it is rich of polyphenols and antioxidants, precious for health.

Recommended use
Being a full-bodied oil, with a strong and decisive taste, it adds flavor and complexity to the different dishes. It is excellent on bruschetta, and an ideal ingredient both for savory and well-structured dishes (grilled meats, roasts, legume soups, pasta with beans), and for dishes with sweet sensations (potatoes or soups of leek or onion).
